Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity.

Ingredients

3 cups milk
1 cup heavy cream
4 tablespoons honey
1 loaf day-old bread, cut into small pieces
1/2 cup pine nuts, toasted
1/2 cup raisins
Ground cinnamon, for sprinkling

Instructions

Preheat the oven to 400 degrees F. In a pot, combine the milk and cream. Bring to a boil. Stir in the honey and remove the pot from the heat. Spread the bread out in a deep baking pan, and sprinkle the pine nuts and raisins on top. Pour the heated mixture over the bread and sprinkle with a generous amount of cinnamon. Place the baking pan in the oven and cook for approximately 15 minutes. Serve immediately.
