Ingredients
1/4 cup flour
1/4 cup cornmeal
1 tsp onion powder
1 tsp ground basil
1/2 tsp garlic salt
1/2 tsp ground thyme
1/4 tsp white pepper
1/4 tsp cayenne pepper
1/4 tsp pepper
4 fillets catfish
1/4 tbsp butter
1 lemon yields lemon juice
Instructions
1. Combine flour, cornmeal, onion powder, dried basil, garlic salt, dried thyme, white pepper, cayenne pepper, and black pepper into a large ziploc bag.
2. One by one place each fillet into the ziploc bag and shake to coat fillet in spices.
3. Melt butter in frying pan on medium heat
4. Place fillets in frying pan and cook covered for about 6 minutes on each side, adding lemon juice as needed.
5. Enjoy!
6. Note: you can also add lemon herb or lemon pepper for that extra lemon taste, just sprinkle a little on each fillet before placing in frying pan.
