Lunch: Piña Colada Popsicles

Pineapples are loaded with vitamins and minerals including vitamin A, vitamin C, calcium, phosphorus, and potassium.

Ingredients

2 c. fresh sweet pineapple chunks
1 can sweetened cream of coconut
1 c. pineapple juice
1/4 c. light rum or coconut rum (like Malibu)
2 tbsp. fresh lime juice
1 pinch salt

Instructions

Purée ingredients in a blender until smooth and transfer mixture to a large glass measure or pitcher.
Pour into 10 3-ounce pop molds and insert sticks. Freeze at least 24 hours before unmolding.
