Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system.

Ingredients

4 eggs
1 tbsp. fat-free milk
1/4 tsp. dried oregano leaves
.13 tsp. garlic powder
.13 tsp. salt
.13 tsp. Black pepper
1/4 c. chopped red bell pepper
1/4 c. chopped broccoli florets
4 oz. Morningstar Farms® Veggie Sausage Links (sliced)
1/4 c. canned sliced mushrooms
1/2 c. shredded fat-free Cheddar cheese or reduced-fat Cheddar cheese

Instructions

In medium bowl whisk together eggs, milk, oregano, garlic powder, salt, and pepper.
In small nonstick skillet coated with cooking spray cook bell pepper, broccoli, and Morningstar Farms® Veggie Sausage Links over medium heat until vegetables are tender. Remove from skillet. Set aside.
In same skillet cook egg mixture over medium-low heat until set. Top with vegetable mixture and mushrooms. Sprinkle with cheese. Tightly cover. Let stand for 3 to 5 minutes or until cheese melts. This recipe has been tested and endorsed by Kellogg and Morningstar Farms®.
