Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 lb. strawberries, hulled
3/4 c. sugar
1/2 tsp. cinnamon
1/2 tsp. lemon peel
1/2 tsp. vanilla
1 tbsp. lemon juice

Instructions

Make the Coulis: In 3-quart saucepan, cook strawberries, cinnamon, and lemon peel on medium until strawberries are soft but still red, stirring, 8 to 10 minutes. Transfer to blender; puree until smooth. Stir in vanilla and lemon juice.
Make the Parfait: In 8-ounce jar, distribute granola, nonfat plain yogurt, and coulis in layers. Can be refrigerated, sealed, overnight. Garnish with strawberry.
