Health and fertility benefits of Spiced Cranberry Wheat Bread Recipe

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. (Reference: http://www.ncbi.nlm.nih.gov/pubmed/11506060). Researchers believe that cranberries contain substances that prevent infection-causing bacteria from sticking to the urinary tract walls. However, store-bought cranberry juice is typically all sugar - so make sure to stick with straight cranberries. One tbsp of honey has a glycemic index (GI) of 55.

Ingredients

1-1/4 cups water (70 ° to 80 °)
1/3 cup honey
2 tablespoons canola oil
1-1/2 teaspoons salt
2-1/4 cups bread flour
1-1/4 cups whole wheat flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
2 teaspoons active dry yeast
1 cup dried cranberries
1 tablespoon grated orange peel

Instructions

In bread machine pan, place the first 10 ingredients in order suggested by manufacturer. Select whole grain bread setting. Choose crust color and 2-lb. loaf setting if available.
Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).
Just before the final kneading (your machine may audibly signal this), add the cranberries and orange peel.
