Health and fertility benefits of Fortune Fruit Salad

Grapefruits are rich in folic acid. One grapefruit will give you 8% of your daily needs of folic acid. Pineapples are loaded with vitamins and minerals including vitamin A, vitamin C, calcium, phosphorus, and potassium.

Ingredients

2 cups raspberries
8 kumquats, thinly sliced
5 small oranges, peeled and cut into segments
2 pomelo or 3 pink grapefruit, peeled and cut into segments
One 20-ounce can lychees, drained
1/2 pineapple, peeled, cored and cut into 1-inch pieces

Instructions

For the fruit salad: Combine the raspberries, kumquats, oranges, pomelo, lychees and pineapple in a medium serving bowl. Chill, covered, in the fridge.
For the spiced syrup: In a small saute pan over medium heat, combine the Mandarin juice, maple syrup, cloves, star anise and cinnamon sticks. Remove from the heat and leave to cool and let the flavors infuse.
Just before serving, drizzle the cooled syrup over the fruit salad. Toss to combine and serve immediately.
