Health and fertility benefits of Strawberry-Almond Smoothie

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. (Reference: http://www.ncbi.nlm.nih.gov/pubmed/11506060). Agave has a low glycemic index (GI) of 17.

Ingredients

2 tablespoons raw almonds, soaked overnight and drained
1 cup coconut water
Pinch of salt
1 cup frozen strawberries
2 dried white figs, coarsely chopped
1/2 teaspoon agave nectar
Pinch of ground cinnamon

Instructions

In a blender, puree the almonds with the coconut water and salt until smooth. Strain the almond milk through a fine sieve. Rinse out the blender. Add the strawberries to the blender with the figs, agave nectar, cinnamon and the almond milk and puree. Pour into a tall glass and serve.
