Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. One tbsp of honey has a glycemic index (GI) of 55. Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Walnuts are low on the glycemic index. What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.

Ingredients

1/2 cup sugar
1/3 cup water
1/4 cup honey
1 tablespoon fresh lemon juice
2 cinnamon sticks
6 green cardamom pods, lightly crushed, or 1/2 teaspoon ground cardamom (optional)
2 teaspoons brandy or cognac
3/4 cup coarsely chopped walnuts, toasted
3/4 cup coarsely chopped pecans, toasted
2 (1.9-ounce) packages mini phyllo tart shells (30 shells)

Instructions

Combine first 5 ingredients and cardamom, if desired, in a heavy saucepan; bring to a boil over medium-high heat. Reduce heat to medium-low; cook 5 minutes. Remove from heat; strain and discard solids. Stir in brandy and nuts.
Arrange tart shells on a parchment paper-lined baking sheet. Divide nut mixture evenly among shells. Bake at 350 ° for 8 to 10 minutes or until pastry is golden. Store, uncovered, at room temperature until ready to serve.
