Salmon is rich in omega-3 fatty acids and also one of the best sources of vitamin D. Keeping vitamin D levels up is important to women with PCOS.

Ingredients

Four 7-ounce cans red or pink salmon, drained
1/3 cup bottled white horseradish
1/4 cup plain dried breadcrumbs
2 teaspoons soy sauce
4 green onions, sliced
Black pepper
Cooking spray

Instructions

In a bowl, combine the salmon, horseradish, breadcrumbs, soy sauce, green onions and a few grinds of pepper. Shape the mixture into eight 3-inch patties.
Coat a nonstick skillet with cooking spray and heat over medium heat. Add the cakes and cook in batches until golden and heated through, about 5 minutes per side.
