Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 1/2 cups packaged matchstick-cut carrots
1 tablespoon extra-virgin olive oil
2 teaspoons fresh lemon juice
1/2 teaspoon honey
1/4 teaspoon kosher salt
1/8 teaspoon ground cumin
1/8 teaspoon paprika
1/8 teaspoon black pepper
Dash of ground cinnamon
2 tablespoons finely chopped fresh cilantro

Instructions

Bring a small saucepan of water to a boil over high heat. Add carrots; boil 25 seconds. Drain and rinse under cold water; drain. Pat carrots dry with paper towels. Combine olive oil, lemon juice, honey, salt, cumin, paprika, pepper, and cinnamon in a medium bowl, stirring with a whisk. Add carrots and cilantro to juice mixture; toss.
