Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). However, store-bought cranberry juice is typically all sugar - so make sure to stick with straight cranberries. Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity.

Ingredients

6 cups fresh broccoli florets
1 can (8 ounces) sliced water chestnuts, drained
1/2 cup dried cranberries
1/4 cup chopped red onion
3/4 cup reduced-fat mayonnaise
3/4 cup fat-free plain yogurt
1-1/2 teaspoons sugar
1-1/2 teaspoons cider vinegar
1-1/2 teaspoons Dijon mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup slivered almonds, toasted

Instructions

In a large bowl, combine the broccoli, water chestnuts, cranberries and onion.
In a small bowl, whisk the mayonnaise, yogurt, sugar, vinegar, mustard, salt and pepper. Pour over salad; toss to coat. Just before serving, sprinkle with almonds.
