Ingredients
1 oz plain skim yogurt
1 tsp chili powder
12 oz chicken breast, chopped
2 1/2 cups reduced sodium chicken broth
1/2 tsp garlic
1 cup chopped onion
4 oz green chili peppers
38 oz cannellini beans
Instructions
1. Coat a large pot with cooking spray. Over medium-high heat add onion and garlic and sauté until tender.
2. Add half of the beans, green chilis, broth, chicken, chili powder and salt.
3. Mash the remaining beans and add to pot.
4. Bring mixture to a boil, cover, reduce heat and simmer for about 20 minutes.
5. Top with a dollop of reduced fat yogurt (optional) and chili powder.
