Salmon is rich in omega-3 fatty acids and also one of the best sources of vitamin D. Keeping vitamin D levels up is important to women with PCOS. Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility.

Ingredients

4 salmon fillets
4 tbsp extra virgin olive oil sun-dried tomato dressing
1 medium whole tomato, chopped
1 cup pieces or slices mushrooms
4 cups spinach

Instructions

1. Heat oven to 375° F (190° C). Place salmon fillets, skin side down, in 13x9-inch baking dish sprayed with cooking spray.

2. Mix remaining ingredients until blended; spoon over salmon.

3. Bake 20 to 25 minutes, or until fish flakes easily with fork.
