Lunch: Spinach Sautéed in Garlic and Oil

Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility.

Ingredients

2 Tbsp extra virgin olive oil
2 1/4 lb spinach, trimmed, well washed and dried
3 cloves garlic, minced
Pinch crushed red chile flakes
1/8 tsp kosher salt
1/4 tsp freshly ground black pepper
1 lemon, halved

Instructions

Heat the oil over high heat in a very large skillet until very hot. Add the spinach (you may need to work in batches) and cook, stirring, for about 1-2 minutes; the spinach should turn bright green and wilt slightly. Add the garlic and red chile flakes and continue to cook, stirring constantly, until the garlic begins to release its aroma, approximately 30 seconds.
Remove the spinach from the heat, and season with salt and pepper. Toss well to combine, and serve with lemon on the side (for squeezing juice over the spinach).
