Salmon is rich in omega-3 fatty acids and also one of the best sources of vitamin D. Keeping vitamin D levels up is important to women with PCOS. Basil is an excellent stress reliever, and has antioxidant and anti-inflammatory benefits.
Ingredients
1/2 tsp leaves basil
1/2 cup fat free italian dressing
10 small kalamata olives
1 1/2 cups pieces or slices mushrooms
3 cups diced red potatoes
1 medium zucchini, cut into 1/2" pieces
1 medium red bell pepper, cut into 1" pieces
4 fillets salmon
Instructions
1. Heat oven to 425 °F (210 °C).
2. Spray 15x10x1" pan with cooking spray. Place salmon, potatoes, mushrooms, bell pepper and zucchini in pan.
3. Brush with half of the dressing; sprinkle with basil.
4. Bake 20 minutes.
5. Add olives to pan and stir vegetables slightly. Drizzle remaining dressing over salmon and vegetables.
6. Bake 5 to 10 minutes longer or until fish flakes easily with work and potatoes are tender.
