Appetizer: Tomatillo-Cilantro Salsa with Lime

Fresh spicy salsa that's good as a dip or added to chicken, pork or fish.

Ingredients

1 tbsp extra virgin olive oil
1 dash salt
2 wedges yield lime juice
1/2 cup cilantro
2 tbsps green onion
8 oz tomatillos
1 jalapeno

Instructions

1. Put all ingredients, except olive oil, in blender. Blend well.

2. Stir in olive oil.

3. Serve once prepared or let mature in the refrigerator for up to two days.
