Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility.
Ingredients
3 1/4 cups vegetable broth
1/4 cup olive oil
4 cups cherry tomatoes
1 tsp chili powder
2 tsps cumin seed
1 1/2 tsps paprika
11 medium celery stalks
5 cloves garlic
1 large onion
10 oz spinach
12 oz baby carrots
8 cups water
16 oz lentils
Instructions
1. Saute onion, garlic, celery, and carrots in the olive oil.
2. Add chili powder, paprika, and cumin seeds and cook for a minute, stirring constantly.
3. Add lentils, water and stock and dash of salt and pepper.
4. Bring to a boil, cover, reduce heat and simmer for an hour.
5. Add the spinach and tomatoes and cook for a few minutes.
