Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility. Brown rice is a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Miso is extremely nutrient-dense and believed to alkalinize the body and stop the effects of carcinogens in the system.

Ingredients

2 tbsp. canola oil
2 garlic cloves, chopped
1 tbsp. chopped, peeled fresh ginger
1 1/4 lb. skinless, boneless chicken thighs, coarsely chopped
1/4 tsp. kosher salt
1/4 tsp. Freshly ground black pepper
2 tbsp. yellow or white miso
2 tbsp. water
10 oz. prewashed baby spinach
3 c. cooked brown rice

Instructions

In a deep 12" skillet, heat canola oil, garlic, and ginger on medium; 3 minutes, stirring. Add chicken, salt, and pepper. Cook 4 minutes.
In a small bowl, whisk miso and water until smooth; add to skillet along with spinach. Cover and cook 3 minutes or until spinach begins to wilt, stirring occasionally. Serve with brown rice.
