Health and fertility benefits of Cinnamon Roll Cookies
Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients
1 lb. Sugar cookie dough
1/4 c. brown sugar
2 tsp. ground cinnamon
1 c. confectioners' sugar
2 tsp. whole milk
Instructions
Heat oven to 350 degrees F and line two baking sheets with parchment paper. Divide sugar cookie dough in half and roll each halve into large 1/4-inch-thick rectangles.
In small bowl, combine brown sugar and ground cinnamon. Sprinkle rectangles with sugar mixture and tightly roll up each into tight log. Slice into 1/4-inch-thick slices and transfer to prepared baking sheets. Bake until lightly golden, 12 to 14 minutes.
Let cool on sheets 5 minutes before transferring to wire racks to cool completely.
In small bowl, combine confectioners' sugar with whole milk and drizzle over cooled cookies.
