Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Walnuts are low on the glycemic index. What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.

Ingredients

1 large egg, with 1 tbsp water, lightly beaten for glaze
1/4 tsp cinnamon
1/4 tsp salt
1 tbsp vinegar
1 oz margarine
4 medium tart apples, peeled and sliced
1/4 cup sultanas or raisins
1/4 cup chopped walnuts
1/3 cup water
1/2 cup sugar
2 1/2 cups flour, sifted

Instructions

1. To make the pastry, blend flour and salt in a large bowl.

2. Add margarine and cut through with a knife to blend.

3. Add water and vinegar and knead to form dough.

4. Divide dough in half and roll out each half until very thin.

5. To make the filling mix all ingredients together.

6. Preheat oven to 350 °F (175 °C). Cover each rectangle of dough with filling, roll up.

7. Place on baking sheet with dough joint facing down.

8. Brush with glaze and bake 45 minutes until golden.
