Sunflower seeds are an excellent food for PCOS as they are packed with vitamin B2 (riboflavin) and vitamin B6 (pyridoxine). Just one cup of sunflower seeds provides 30% of the recommended daily intake for vitamin B6. Sunflower seeds are also loaded with two other important of PCOS busting minerals: zinc and magnesium. Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to.
Ingredients
1/2 cup 2 percent plain Greek yogurt
1/2 cup low-fat mayonnaise
1 teaspoon finely grated lemon zest
1/3 cup fresh lemon juice
1/2 cup chopped chives
1/4 cup chopped dill
Salt
Freshly ground pepper
2 pounds raw brussels sprouts, finely shredded in a food processor (12 cups)
1/4 cup plus 2 tablespoons salted roasted sunflower seeds
Instructions
In a large bowl, whisk the yogurt with the mayonnaise, lemon zest, lemon juice, chives and dill and season with salt and pepper. Add the brussels sprouts and toss to coat evenly. Fold in the sunflower seeds and serve.
