Ingredients
12 oz chicken, diced
1/4 cup fat free mayonnaise
1 1/3 cups dried cranberries
1/4 cup walnuts, chopped
18 cups spring mix
1 tsp curry powder
2 medium peaches
Instructions
1. Wash and coarsely chop 2 medium peaches.
2. Combine all ingredients except the spring mix, chicken and peaches into a bowl. Blend well.
3. Divide the spring mix salad greens among 4 plates.
4. Top each with 1/4 of the chicken and peaches.
