Ingredients

2 1/2 medium chicken breasts
3 tbsps olive oil
1 cup green beans
3 cups chopped broccoli
2 cups shredded Nappa cabbage
1 large carrot
3 cups cauliflower
2 stalks medium celery
2 cloves garlic
2 tsps fresh ginger
1 large onion
1 medium green pepper
1 cayenne seeds
1 large yellow pepper
1/2 cup water
3 tbsps low sodium soy sauce
1 tbsp honey

Instructions

1. Cut up chicken into strips or cubes, brown in 2 tablespoons of extra virgin olive oil.

2. Add chopped or pressed garlic and ginger.

3. At the same time heat 1 tablespoon of extra virgin olive oil in wok and add all chopped vegetables.

4. When chicken is browned add 1/2 cup of water to pan - stir.

5. When fully cooked, add to vegetables and serve over rice or quinoa.
