Health and fertility benefits of Broccoli-Rice Pilaf

Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system.

Ingredients

1 tbsp. olive oil
1 onion
kosher salt
Pepper
1 clove garlic
1 c. long-grain white rice
1 bunch broccoli crowns (florets only)

Instructions

Heat the oil in a medium saucepan over medium heat. Add the onion, season with 1/2 teaspoon each salt and pepper, and cook, covered, stirring occasionally, until tender, 6 to 8 minutes. Stir in the garlic and cook for 1 minute.
Add the rice and stir to coat. Add 2 cups water and bring to a boil. Reduce heat and simmer, covered, for 12 minutes. Add the broccoli and continue cooking until the rice is just tender, 3 to 5 minutes more. Remove from the heat and let stand, covered, until the broccoli is tender, about 5 minutes. Fluff with a fork.
