Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system. Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. One tbsp of honey has a glycemic index (GI) of 55.
Ingredients
2 cloves garlic
1/2 c. peanut butter
1/4 c. soy sauce
1/4 c. water
2 tbsp. honey
Juice of 1 lemon
kosher salt
Freshly ground black pepper
1 tbsp. vegetable oil
1 red pepper, sliced
1 yellow pepper, sliced
1 red onion, thinly sliced
1 head broccoli, florets only
2 c. green beans, trimmed
2 c. carrots, sliced into half moons
1 pkg. cooked soba noodles
Instructions
In a medium bowl, combine garlic, peanut butter, soy sauce, water, honey, and lemon juice and whisk until smooth. Season with salt and pepper.
Heat a large skillet over medium-high heat and add vegetable oil. Cook onions, carrots, broccoli, peppers, and green beans until tender but still vibrant, about 10 minutes.
To skillet, add cooked soba noodles and stir to combine. Serve!
