Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility. Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Ingredients
1 tablespoon olive oil
1 tablespoon white wine vinegar
1 tablespoon minced fresh basil
1/8 teaspoon kosher salt
1/8 teaspoon black pepper
1/2 cup sliced hearts of palm
5 ounces fresh baby spinach
3 tablespoons pine nuts, toasted
Instructions
Combine oil, vinegar, basil, salt, and pepper in a large bowl, stirring with a whisk. Add hearts of palm and spinach; toss to coat. Sprinkle with pine nuts.
