Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Ingredients
2 1/2 pounds fresh broccoli, cleaned and cooked
1/2 teaspoon salt
Dash of pepper
2 tablespoons butter or margarine, melted
3/4 cup grated Parmesan cheese
Instructions
Arrange broccoli in a serving dish. Season with salt and pepper. Pour melted butter over broccoli, and sprinkle with Parmesan cheese. Place under broiler for 2 minutes or until cheese is golden brown.
