Health and fertility benefits of Spinach Egg Muffins
Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility.
Ingredients
6 large eggs
2 oz sharp cheddar cheese
1 cup 2% milk
3 medium mushrooms, chopped
1 medium onion, chopped
1 cup spinach
Instructions
1. Pre-heat oven to 350 °F (175 °C).
2. Beat eggs and milk in separate bowl. Add spices as wanted e.g. paprika, black pepper, garlic salt, and turmeric.
3. Chop your spinach, onions, and mushrooms.
4. Saute your onions.
5. Spray muffin pan with baking spray. Fill each spot with spinach, onions, and mushrooms evenly. It will be about half way filled. Then pour your egg batter into each spot about 3/4 of the way.
6. After about 15 minutes of baking, top with cheese and bake for a further 5-10 minutes.
