Health and fertility benefits of Mashed Sweet Potatoes

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. (Reference: http://www.ncbi.nlm.nih.gov/pubmed/11506060). One tbsp of honey has a glycemic index (GI) of 55.

Ingredients

10 cups sweet potatoes, peeled and chopped
1/4 to 1/2 cup butter
3 tablespoons honey
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt

Instructions

Add the potatoes to a large Dutch oven and cover with water. Bring to a boil over medium-high heat. Reduce the heat and simmer or until the potatoes are tender, about 8 to 10 minutes, drain well. Return the potatoes to the Dutch oven and add the butter, honey, cinnamon and salt. Beat at medium-low speed with an electric mixer until smooth. Transfer to a serving bowl and serve hot.
Cook's Note: For more sweetness, add more honey.
