Lunch: Apple-Cheddar Salad with Walnuts

One tbsp of honey has a glycemic index (GI) of 55. Ingredients

1/4 c. apple cider or apple juice
2 tbsp. cider vinegar
1 tsp. honey
1/4 tsp. salt
.13 tsp. coarsely ground black pepper
1 medium head Boston lettuce
1 lb. Pink Lady, Honey Crisp, or Empire apples
1/4 c. walnuts
3 oz. shaved extra-sharp Cheddar cheese

Instructions

In large serving bowl, whisk together cider, vinegar, honey, 1/4 teaspoon salt, and 1/8 teaspoon coarsely ground black pepper. Add lettuce and apple slices to bowl and toss to coat. Arrange salad on 6 plates; top with walnuts and Cheddar cheese.
