Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.

Ingredients

3 tbsp. olive oil, divided
1/2 c. plain bread crumbs
1/4 c. finely chopped walnuts
3 cloves garlic, finely chopped
3 tbsp. chopped parsley
1 lb. Cooked spaghetti
4 oz. blue cheese, crumbled
3 tbsp. lemon juice
1/2 c. pasta water, reserved
kosher salt
Black pepper

Instructions

In saucepan, in olive oil on medium, cook bread crumbs, walnuts, garlic, and parsley 5 minutes or until well-toasted, stirring.
Toss spaghetti with blue cheese, lemon juice, remaining olive oil, and pasta water. Fold in crumb mixture and salt and pepper to taste.
