What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.

Ingredients

1/2 cup egg beaters
1/4 tsp cinnamon
1/4 tsp salt
1 tsp vanilla extract
1/2 cup applesauce
2 cups chopped zucchini, grated
1/2 cup ground walnuts
1 tsp baking powder
1 tsp baking soda
6 oz sweetener
1 1/4 cups flour

Instructions

1. Mix flour, cinnamon, baking powder, baking soda and salt in one bowl, set aside

2. Mix Splenda, egg beaters, applesauce and vanilla extract in a larger bowl. Blend well and add flour mixture.

3. Add in zucchini and walnuts and blend all ingredients until smooth.

4. Pour into greased loaf pan and bake at 350 °F (175 °C) for 25 minutes.
