Kale is an excellent source of calcium, which has an important role in egg maturation and follicle development in the ovaries. Researchers believe that cranberries contain substances that prevent infection-causing bacteria from sticking to the urinary tract walls. However, store-bought cranberry juice is typically all sugar - so make sure to stick with straight cranberries. Pineapples are loaded with vitamins and minerals including vitamin A, vitamin C, calcium, phosphorus, and potassium.

Ingredients

1 package (4.5 ounces) baby kale and greens
2 ripe firm pears, halved, cored and sliced
1/2 cup red onion, thinly sliced
1/4 cup dried cranberries
1/4 cup pistachios, chopped
1/4 cup olive oil
1/4 cup 100% DOLE® Canned Pineapple Juice
1 teaspoon minced garlic
1/2 teaspoon ground ginger
Salt and ground black pepper to taste

Instructions

Combine salad blend, pears, red onion, cranberries and pistachios in large bowl.
Whisk together olive oil, pineapple juice, garlic, and ginger in small bowl. Add salt and pepper to taste. Pour over salad mixture; toss to evenly coat.
