Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Ingredients
3 cups broccoli florets
¼ cup finely chopped onion
¾ cup chopped celery
1/3 cup (1 ½ ounces) reduced-fat shredded cheddar cheese
¼ cup light mayonnaise
¼ cup nonfat plain yogurt
2 tablespoons honey
½ teaspoon seasoned salt
1/8 teaspoon black pepper
Instructions
In a medium bowl, combine broccoli, onion, celery, and cheese; set aside.
In a small bowl, combine remaining ingredients. Add mayonnaise mixture to vegetable mixture and toss.
Cover and refrigerate at least 2 hours to “marry” the flavors.
