Salmon is rich in omega-3 fatty acids and also one of the best sources of vitamin D. Keeping vitamin D levels up is important to women with PCOS. Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to.
Ingredients
1 cup yogurt plain, low fat
1/4 tsp dill weed
1/4 tsp leaves thyme, dried
0.12 tsp salt
1 tbsp mayonnaise
1 wedge yields lemon juice, (1/2 tsp)
1 tbsp green onion, minced
1 tbsp parsley, minced
12 oz salmon
Instructions
1. Spoon yogurt onto several layers of pepper towels.
2. Spread yogurt evenly to 1/2" thickness.
3. Cover yogurt with more paper towels. Let stand 5 minutes.
4. With rubber spatula, scoop yogurt into medium bowl.
5. Add salmon and remaining ingredients except lemon and parsley. Stir well. Cover and chill.
6. Garnish with fresh parsley and lemon slice, if desired. Spread on cucumbers.
