Health and fertility benefits of Vegetable Rice Casserole

Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system.

Ingredients

5.4 fl oz
2 1/2 cups fat free vegetable broth
broccoli flowerets
8 oz mushrooms
1 cup dry white rice
1/2 tbsp pepper
1 cup chopped onion
2 lbs potatoes

Instructions

1. Peel and cube potatoes, chop onions.

2. Sauté mushrooms and onions in wine in a non-stick skillet, over medium heat until onions are soft and translucent.

3. Stir in broth and heat to boil. Remove from heat.

4. In large baking dish, spread potatoes, rice and broccoli evenly. Sprinkle evenly with black pepper.

5. Pour broth mixture evenly over rice, broccoli and potatoes. Cover well with foil.

6. Bake for 1 1/2 hours at 325 °F (160 °C) or until fully cooked.
