Lunch: Easy Pasta Primavera

This meatless entrée uses chicken broth and a little cornstarch instead of the usual cream and butter to make a tasty but lighter version of classic pasta primavera.

Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system.

Ingredients

2 tbsp. cornstarch
1 3/4 c. Swanson® Natural Goodness® Chicken Broth
1 tsp. dried oregano leaves
1/4 tsp. garlic powder
2 c. broccoli florets
2 medium carrots
1 medium onion
1 medium tomato
1/2 lb. thin spaghetti
3 tbsp. grated Parmesan cheese

Instructions

Stir the cornstarch and 3/4 cup broth in a small bowl until the mixture is smooth.
Heat the remaining broth, oregano, garlic powder, broccoli, carrots and onion in a 4-quart saucepan over medium heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the vegetables are tender-crisp.
Stir the cornstarch mixture in the saucepan. Cook and stir until the mixture boils and thickens. Stir in the tomato. Add the spaghetti and toss to coat. Sprinkle with the cheese.
