Lunch: Pork Chops with Peach Salsa

Recipe by Woman's Day Kitchen Make the most of summer's bounty with just-ripe peaches diced and tossed with fresh cilantro, lime juice and jalapeño pepper—the perfect accompaniment to meaty, chipotle-rubbed pork chops.

Ingredients

1/2 c. Southwestern Chipotle 10-Minute Marinade (we used Mrs. Dash)
4 bone-in pork chops (3 ⁄4-in.-thick)
2 peaches
1/3 c. fresh cilantro leaves
Grated zest and juice from 1 large lime
1 small jalapeño pepper
Kosher salt and pepper

Instructions

Put the marinade and pork in a large resealable bag. Marinate in the refrigerator for 2 hours or overnight.
Heat grill to medium. Remove the pork from the marinade (discard the marinade) and grill until cooked through, 5 to 6 minutes per side.
Meanwhile, in a medium bowl, combine the peaches, cilantro, lime zest and juice, jalapeño and 1/4 tsp salt. Serve with the pork.
