Health and fertility benefits of Thai Fruit Salad

One tbsp of honey has a glycemic index (GI) of 55. Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Pineapples are loaded with vitamins and minerals including vitamin A, vitamin C, calcium, phosphorus, and potassium.

Ingredients

1/4 cup light coconut milk
1 teaspoon honey
1 teaspoon Thai hot sauce, such as Sriracha
2 scallions, thinly sliced
1 lime, zested and juiced
1 tablespoon sesame oil
Sea salt and freshly ground black pepper
2 cups diced mango
2 cups diced pineapple
2 tablespoons unsalted peanuts

Instructions

In a large bowl, add the coconut milk, honey, hot sauce, scallions and lime zest and juice. Whisk well to combine. Drizzle in the sesame oil and taste for seasoning; add salt and pepper if necessary. Add the fruit and nuts to the bowl and toss well to combine. Serve immediately.
