Ingredients

1 tbsp olive oil
12 oz chicken breast
1/2 tbsp stir fry sauce
2 sprigs fresh coriander
1/2 medium red onion
2 oz baby spinach
1 oz flaked almonds
4 1/2 oz couscous

Instructions

1. Heat half the oil in a pan, add the onion and cook, stirring occasionally until soft. Cook the couscous according to packet instructions and stir in the onion, reserving a few slices for garnish. Keep warm.

2. Heat remaining oil in a frying pan and sauté thinly sliced chicken for 5-10 minutes until cooked through.

3. Add the sauce and spinach to the pan and simmer for 3 minutes until spinach has wilted.

4. Scatter the almonds and reserved onion slices on the chicken. Serve with the couscous topped with the coriander.
