Ingredients

2 cups sifted cake flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup firmly packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup canned pumpkin
1/4 cup unsweetened applesauce
3 tablespoons vegetable oil
2 large eggs, lightly beaten
1 teaspoon vanilla extract
Cooking spray

Instructions

Preheat oven to 350 °.
Combine first 8 ingredients in a medium bowl; make a well in center of mixture. Combine pumpkin and next 4 ingredients; add to flour mixture, stirring just until dry ingredients are moistened.
Spoon batter into a 9- x 5-inch loafpan coated with cooking spray. Bake at 350 ° for 45 to 50 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove loaf from pan, and let cool completely on wire rack.
