Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. (Reference: http://www.ncbi.nlm.nih.gov/pubmed/11506060). Chia seeds are made up of 60% Omega-3 fatty acids and are the highest source of protein out of any type of seed.

Ingredients

1 tablespoon chia seeds
3/4 cup coconut water
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cardamom
1/8 teaspoon ground cloves
2 cups frozen peaches
1/2 cup low-fat Greek yogurt

Instructions

Combine chia seeds and coconut water in a small bowl and stir well. Let soak for at least 15 minutes (or up to overnight). Place chia mixture and remaining ingredients, in the order listed, in blender and blend until smooth.
